Internships and Papers- I am a Grad Student!

Yesterday morning I got up feeling much more rested, which was good considering I had a lot to do. Since I had a weekend of rich eating, I really wanted to get back to the cleaner eating that my body is used to. For breakfast I have oatmeal topped with berries and a cup of coffee.

Nothing makes me feel healthier than oatmeal :)

I started back at my old office again, the bounce back and forth should be minimized now and I am delighted about that :)I felt a little rusty at first but caught back up immediately and was feeling back to myself in no time.  Lunch was a giant salad from the salad bar across the street that I ate while working.

It had a little of everything:

  • Spring mix
  • Peas
  • Kidney beans
  • Black Beans
  • Chickpeas
  • Carrots
  • Onions
  • Tuna
  • Cucumbers
  • Black olives
  • Banana peppers
  • Jalapenos
  • Artichoke hearts
  • Beets
  • Pickles
  • Feta
  • Balsamic vinegar

My mouth is watering as I am typing this. I love me some veggies!

Right as I was leaving work, I got an email from a local High School offering me an internship for next year!!!! I am thrilled to be working with this school and love the things they are doing to help their students.  I could not be more excited about this opportunity!

After work I headed to class and handed in my first paper due this week. The last month of a semester of graduate school is also known as hell month! Class was fine, it was long but it flew by fast! After class I headed home to work on my second paper sue this week, which is due today. Before starting the paper process, I make myself a quick dinner. I had a kidney bean and reduced fat cheddar cheese quesadilla. I just used about 1/2 a cup of beans, 1/4 of a cup of cheddar and a whole wheat tortilla and pressed it on the Forman grill. I topped it with medium salsa and ate it with a side of steamed broccoli.

For dessert I had a few squares (well not really squares) of dark chocolate.

I spent the rest of the evening reading 8 journal articles that I wanted to use for my paper. By the time those articles were read my brain was fried. After work, class and reading all those articles- I opted to go to bed and get up at 5:15 am to write the actual paper before work.

When I got up I had my two big glasses of water followed by coffee.

I wrote the paper in tow hours- I was in the zone! it was supposed to be 3-5 pages but it is 7 page. Oops! It is about school shootings and that is a topic that is so interesting to me!

Breakfast was scrambled egg whites with vegan grated “cheese”, garlic and pepper I also had two whole wheat blueberry muffins I had made a few months ago and frozen that I topped with a little earth balance.

Lunch was eaten while doing more homework. I had a veggie burger on a whole wheat bagel thin with laughing cow cheese and a side of steamed broccoli.

On my way back from my afternoon meeting, I stopped and grabbed a venti iced skinny vanilla latte from Starbucks. Getting up at 5am to write a paper means I was sure to hit that afternoon slump.

Right now I am blogging to you from my desk at work – after hours. I plan on staying here until class at 7:15 and getting some more school work done. I was actually feeling fine to work out and not sore from Saturday anymore, but I got an awful stomach, so no working out for me today. I think the combo of coffee and broccoli make for a tummy ache.
