Quinoa Two Ways

It’s Friday, It’s Friday, It’s Friday!!!!!! Ok- sorry, I just had to get that out :)

Yesterday after work, I returned home to find a delightful gift waiting for me :)

The amazing people at Pretzel Crisps hand delivered two bags of crisps to my apartment while I was at work. I was so excited and so was Adam, he loves pretzels so much he is convinced they are their own food group for crying out loud.

I received a variety of flavors:

In my pack was:

  • Original
  • Sesame
  • Buffalo Wing
  • Everything
  • Garlic Parmesan
  • Classic
  • Supreme
  • Tuscan Three Cheese
  • Cinnamon Toast

The Buffalo Wing flavor seemed really interesting to me. I love anything Buffalo. So I had to try one (ok- two!) right away.

I loved it! Very Buffalo-like! I think I may have found a new snack addiction :)

After sampling the pretzels I headed to Corssfit for a Kettle bells and abs class. This class totally kicked my a**! I was dripped with sweat about 10 minutes in. I have taken this class before and it wasn’t nearly as tough. I think it all depends on who is teaching.  I left feeling sweaty and amazing! After two straight days of Crossfit- I am definitely feeling sore all over today- and I love it!

For dinner last night I had some black quinoa in my cupboard calling my name. I love quinoa, but have never had black quinoa. When I saw it while browsing in a small health food store in Cambridge, I just had to buy it. I combined 1 cup of quinoa with 1 and 3/4 cups of water in a pan and brought it to a boil. I boiled it for two minutes then covered it and let it simmer for 20 minutes.

In the meantime, I stir-fried a few frozen shrimp and leftover green beans with a low sodium soy sauce and some spicy ginger sauce. The  quinoa yielded about 3 cups cooked. I combined one cup with the stir-fry and called in dinner!

Black quinoa tastes pretty much the same as tan quinoa- next stop red quinoa :)I spent the rest of the night working on the dreaded chore of laundry. I wont complain- we have established my disdain for this chore in many, many posts.

Breakfast this morning was black quinoa again!!! What?! Quinoa for breakfast?! Yes, ma’am (or sir, for the one man I know who actually reads my blog-FFF Dad)!

I combined 1/2 a cup of cooked quinoa, 1/4 a cup of fat free organic milk, a drizzle of raw honey, 1 banana sliced and cinnamon in a bowl and microwaved it for 2 minutes. I topped it with about 1/8 of a cup of pecans. I also had coffee with it.

I love how versatile quinoa is :)
