Hello!!! Have you missed me? You may or may not have noticed, but my blog was down for a while yesterday. I made the switch from a WordPress hosted blog to self-hosting Monday night and yesterday. It was a nerve racking experience but I had the help of Savvy Julie and that made everything so much easier. I was 100% clueless and Julie is 100% awesome! If you are looking to make the switch and need someone to help you out, Savvy Julie is your girl. She rocks!

Monday after work I headed to Crossfit. We were supposed to head outside, but since it was raining we stayed indoors. We did a warm up, which I forget now, that made me sweat. When I am already sweating during the warm up…it is baaaaddddddd news!
Workout:
3 rounds
- 50 Ab Mat sit ups
- 50 double unders or 15o singles – I did the singles
- 50 Air Squats
- 50 kettlebell swings (12 kg)
Obviously- it was murder!!!!!!! I was a flippin’ sweat factory. I was so tired after I could barely stretch.
After Crossfit I made a quick dinner because I had a secret mission to complete that night. Dinner was a veggie and goat cheese panini with baked salt and vinegar chips and grapes.


The sandwich was pretty much amazing! It was spreadable goat cheese, rosted red pepper spread, grilled zucchini and eggplant (frozen from Trader Joe’s) and artichoke hearts (frozen from Trader Joe’s). I seriously love all the different frozen veggie TJ’s has, they come so in handy for things like this. Panini perfection!!
Since yesterday was Adam’s birthday, I made him the most adorable golf cupcakes Monday night- from SCRATCH!

Here is what you will need (makes 12 cupcakes):
Cupcakes:
- 3/4 cup butter (1 1/2 sticks) – room temp
- 1 1/2 cup sugar
- 2 1/2 cup flour
- 2 tsp baking powder
- 2 eggs- room temp
- 1 3/4 tsp vanilla extract
- 1 cup of milk
Frosting:
- 1/2 cup butter (1 stick)
- 8 oz cream cheese
- 3 cup confectioner’s sugar
- 2 tsp vanilla extract
- Green food coloring
Decor:
- Green sugar
- toothpicks
- colored paper
- Candy pearls
How to make cupcakes:
1. Preheat oven to 350º
2. In a large mixing bowl, mix the butter and sugar together using a hand mixer.
3. Add in the eggs one at a time.
4. Stir in all of the dry ingredients until just combined.
5. Add milk and vanilla extract while beating constantly.

6. Line muffin tins with cupcake papers.
7. Fill each cupcake paper 3/4 of the way with batter.
8. Bake for 20-30 minutes.
9. Remove the cupcakes from the tins to racks to cool. Make sure they are cooled off before frosting
10.While the cupcakes are baking cut colored paper into small triangles for gold flags and attach them to toothpicks using scotch tape (while watching the Bruins game

How to make the frosting:
Using a hand mixer, mix the sugar, the cream cheese, the confectioner’s sugar, and the vanilla extract. Then add green food coloring until you reach desired color.
To decorate simply frost, sprinkle with green sugar, stick in a flag and as a few pearls (golf balls).
