All this muggy weather makes me want to stay far, far away from the kitchen and any hot appliances. It also makes me want to put a hat on. This weather is not good for curly girls! I was in the mood for some homemade hummus which I knew would take only seconds to whip up in the Vitamix.

Ingredients:
1 can chickpeas, drained and rinsed
1/4 cup sun dried tomatoes
2 Tbsp capers
1 tsp lemon juice
Put all in a blender or Vitamix and blend until smooth. Done! I’m loving the sun dried tomatoes Trader Joe’s now sells – they add a ton of flavor to some basic dishes, and combined with briny capers was perfect. I stuffed whole wheat pitas with the hummus, some spinach and tomato slices and we enjoyed them for a quick and simple dinner.

I also packed one for my lunch for the next day. Like the neat blue wrapper? In an effort to be a little more green, and stop using so much plastic (including plastic wrap) and aluminum foil, I came across this fabulous company called Reusit. I got this blue sandwich wrapper, which is great for Funk when he packs sandwiches for his night classes, a snack bag, reusable produce bags (no more flimsy plastic!) and bamboo flatware (which I got as a free bonus with a promo code I found online). I love them! It’s definitely going to help us cut back on waste, and also sketchy chemicals leeching into our food. I’ve also seen some similar products sold at Paper Source, if you have one near you.
