Busy Bees

We were outside watching the bees work in the lavender when the call came in.. “Grammy called, there are raspberries!” Two minutes later we were all in the car and on our way to the best pick-your-own patch I know, my mother’s garden.clip_image004

The boys and I picked (and ate) until we had gotten our fill (aren’t they beautiful!?) clip_image006

It’s no wonder they were gone in a flash!

I have no recipes for raspberries today since they always get eaten too quickly, but I will share my latest lunch obsession… Frittatas!

Frittata for Two

1 small Onion, chopped

a handful of Broccoli (or whatever veggies you have on hand)

3 Eggs

2 Egg whites

Salt & Pepper to taste

2 oz of reduced fat Cabot Cheddar cut into small cubes

Sauté the onions in a 9” ovenproof pan, add in the other veggies. Beat the eggs and egg whites in a bowl and season with salt and pepper. Pour eggs over veggies, add cheese and stir around to coat. Pre-heat broiler while letting the eggs cook on medium flame for about 3 minutes. Put pan under the broiler and cook for an additional 3 minutes or until done.

This frittata is just right for two and is lovely alongside a nice salad.
