Funk’s favorite ice cream = Cookies ‘n Cream.

Ingredients:
2 cans light coconut milk
1 tsp vanilla
1/2 cup sugar
pinch of salt
25 Oreo cookies (Nabisco, Trader Joe’s or Newman’s brand all work), crushed
Combine coconut milk, vanilla, sugar and salt in a large bowl and mix to combine. Set aside in the fridge 2 hours or overnight. Prepare ice cream according to ice cream maker’s directions by pouring in just the coconut milk mixture. At the end of churning (about 10 minutes on my machine) add in crushed Oreos and churn for another 5 minutes. Freeze for a few more hours until solid.
Just a note to those who are not coconut fans – coconut milk doesn’t taste a thing like the coconut smell/flavor you probably don’t like (tropical scented sunscreen and maccaroons). It has a very mild flavor that can be used in sweet or savory dishes to give a nice, rich, creamy texture and flavor.
We may or may not have come home one night and dished out a shared 5-scoop bowl of this.
