
Another month, another Recipe ReDux post! This month’s food theme is: pumpkin!!! I really do love all things pumpkin, from pumpkin alfredo to pumpkin blondes, and pumpkin pie ice cream. I always have at least a can of pumpkin in my cabinet, ready to mix into savory dishes like chili, or into cake mix to replace eggs and oil. On some of the warmer fall days we’ve been having, I’ll make a cool pumpkin pie smoothie for breakfast.
Ingredients:
1/4 cup canned pumpkin
1 banana
1/4 cup dry oats
1 cup vanilla almond milk
10 ice cubes
1 tsp pumpkin pie spice
1-2 Tbsp maple syrup, depending on how sweet you want it
1 tsp chia seeds, optional, but it helps to thicken the smoothie and add omega-3s
Blend all ingredients together in a high speed blender, and enjoy your pumpkin pie for breakfast! It’s nice and cool in temperature with warm, fall spices.
